- SUPERSET® LV modified starch is a unique one-piece product which can be used as the entire starch source in the manufacture of jelly gum candies.
- Unlike other confection starches, SUPERSET® LV modified starch offers the advantages of an extremely fast set and low depositing viscosity.
- This fast setting attribute can result in significant reductions in drying (stoving) time, as well as reductions in the stoving temperatures required.
- The candy gel formation is both rapid and complete, yielding a tender, yet firm piece with resistance to sweating. This characteristic also allows the confectioner to remove candy from molding starch at higher moisture content, thus improving product yield and extending shelf life.
- SUPERSET® LV modified starch also offers the confectioner process tolerance and production flexibilitywhen processing high solids slurries.
