- Add this emulsifier in oil phase, mix well oil phase separately to obtain homogeneous phases.
- Heat both oil and water phases to 70 degrees Celsius(or at room temperature), and add water phase into oil phase slowly while stirring with dispersing mixer at 1400-3000 rpm.
- Increase the rotation to 5,000 rpm and carry on the emulsification process for 10 more minutes (after finishing the aqueous phase addition).
- Cool down to 28 degrees Celsius with mild stirring (100 rpm under paddle agitation).
