Cargill Carageenan for Meat & Meat Alternatives - Aubygel & Satiagel is a blend that serves as a texturant, primarily functioning as a gelling agent to enhance the texture and overall appearance of cooked meat and meat alternative products. When incorporated during injection, typically at a concentration ranging between 0.20 and 0.50% of the final product, it aids in reducing cook-off juices, improving binding, and enhancing slicing parameters, resulting in a smoother-tasting product. This product is composed of carrageenan E407, dextrose, and sodium chloride.

Functionality

* As set up by JECFA (FAO/WHO) for INS407, commercial product may include salts (as Potassium Chloride E508) to
obtain specific gelling characteristics.
** Dextrose is a carrier used for standardization purpose. It has no functionality in the final product

Dispersion
This product is free-flowing and "dust-free" during weighing operations.

  • It presents an improved dispersion, but to limit lump formation it is recommended to:
  • Premix the powder with the other dry ingredients,
  • Disperse it in a non-solvent medium (oil, alcohol), and pour the preparation into the liquid while stirring. Continue stirring to obtain a complete dispersion.

Dissolution
The dissolution of the product depends on the medium and the process:

  • It is improved by heat-treatment (time, temperature), shear-stress (propeller, exchanger, homogenizer).
  • A dissolution can be obtained from 80°C (176°F)

 

***Additional comment
Non-hydrogenated sunflower oil is used during the blending step to improve the flowability of the product during the packing step. Based on the definition set up in Regulation No 1333/2008/EC and applicable to the Regulation No1169/2011/EU,

  • It is not consumed as a food by itself;
  • It is intentionally used to fulfill a certain technological purpose;
  • Technically unavoidable traces are present in the final product (≤ 0.2%) however no technical effect is expected in the final product as well as in the final food product.

Consequently, non-hydrogenated sunflower oil can be considered as a processing aid and no labeling is required in the final food product (Reg. No 1169/2011/UE – Article 20d)

  • The product can be used in aqueous, dairy, or fruit media, with various total solids contents.
  • It is however standardized in water, to ensure a constant reactivity in cooked cured meat and meat alternative products.

Texture

  • The gel sets when cooled to a temperature of between 40 to 45°C (104 - 113°F).
