- Ennallin is a natural aromatic molecule with a dominant vanilla note accompanied by milky and almond touches as well as a soft and powdery facet.
- Used alone or in formulation, possessing the property of bringing substance and roundness, Ennallin meets the expectations of flavorists and food industry manufacturers. This natural vanillin is, in fact, capable not only of perfecting the hold and length in the mouth of the aroma but also of breaking the acidity or of masking the bitterness of certain food components.
- Breadmaking is a key development axis for Ennallin. Ennolys works in close collaboration with the Lesaffre Baking Center ™, which has recognized expertise in “finished aroma” applications. Operational solutions have thus been developed for the benefit of bakery professionals. The tests carried out have proved to be very conclusive as to the production of madeleines with a dosage of 0.4% and brioches with a dosage of 50 to 100 ppm, dosages which also make it possible to reduce the intake by about 30%. sugars.
This natural flavor fits perfectly into the following different food matrices:
- dairy products (ice cream, yogurts, etc.),
- chocolate,
- drinks (especially alcoholic),
- specialized products for sports or slimming,
- baby food products ...
- Beyond the food industry, Ennallin is also arousing the interest of perfumers and producers of "ingestible" cosmetics: lipstick, balms, toothpastes, etc. Advanced research is also underway in the field of nutraceuticals and functional foods. .

Certified Kosher and Halal, the natural flavor molecule Ennallin meets the requirements for natural flavoring substances of European (EC 1334/2008) and American regulations (according to FDA directives 101.22 (3)). This vanilla aroma guarantees both a raw material and a natural process. To the limited production capacity of natural vanilla pods, Ennallin natural vanillin opposes constant availability. As its production is not impacted by climatic and local hazards (diseases, crop poverty, etc.), its cost therefore remains fixed and attractive. This biotechnological vanillin also benefits from a stable aromatic profile, served by Lesaffre's unparalleled expertise in natural fermentation.
Sustainable development requirements, consumers' demand for naturalness, cost constraints for manufacturers and flavorists… The natural Ennallin flavor is emerging as an alternative of choice to offer the natural label to finished products from the food, perfume and cosmetics sectors .
