- Pastes prepared with PURITY® 420 develop early high viscosity and remain stable, even over extended storage periods.
- In addition, PURITY® 420 has improved protective colloid characteristics. This product is resistant to the acid, shear and temperature conditions encountered in today's salad dressing manufacturing equipment.
- PURITY® 420 develops a finished dressing with an extremely smooth, creamy texture and heavy body.
- There is minimum breakdown in pre-mixing, pumping, and colloid milling due to the excellent resistance to shear. The result is a dressing with a more stable emulsion and longer shelf life.
