Gem Of The West® Vital Wheat Gluten is isolated from select hard wheat flour by a natural, washing process and followed by delicate flash-drying. This specialized process ensures the product retains the same vitality of wet gluten. Gem of the West® Vital Wheat Gluten provides strength and elasticity, increases volume, and improves the texture of breads, buns, dinner rolls and other yeast-leavened products. It also imparts firmness to pasta and noodles and is used to enhance the protein content of breakfast cereals and snacks. Vital wheat gluten can also be used to add important binding and texture to vegetarian products.

Storage

To achieve maximum stability, store Gem of the West® Vital Wheat Gluten in a cool, dry, and sanitary area away from direct source of heat or any source of water. When stored under the above conditions, the shelf-life is two years from the date of manufacture.
