    Conventional or organic available Eucalyptus olida, also known as the Strawberry Gum, is a medium-sized tree to 20 m, restricted tosclerophyll woodlands on the Northern Tablelands of New South Wales, in Eastern Australia. The bark is fibrous in mature trees. Flowers are cream colored and are followed by small woody capsules. The juvenile leaves are ovate (7 cm long) and dull green. Adult leaves are lanceolate and glossy green (to 17 cm). The leaves are intensely aromatic and are used as a bushfood spice. E.olida is classified as a threatened species in the wild, but is becoming more common in cultivation due to itsessential oil and spice qualities. E. olida leaf is also used as a dried spice product in bushfood cooking, especially with fruit and in herbal teas. It has high anti-oxidant activity.     Conventional or organic available A rainforest tree growing to 40 meters, Aniseed (also known as Anise) Myrtle is very rare in the wild, limited to Bellinger and Nambucca Valleys of New South Wales. Anise Myrtle is grown in plantations around northern New South Wales. These plantations were actually planted for the herb or bush tucker markets until the ‘rediscovery’ of its unique essential oil. The trees are harvested and are then steam distilled for around 1 hour. The harvesting is done by unique farm machinery designed by the farmers themselves. Leaves are cut, a vacuum sucks the leaves into a bin and the leaves are placed into a stainless steel boiler. Anise Myrtle is a new oil to the aromatherapy industry and has the potential to supersede traditional Aniseed essential oils on the basis of a superior Anethole content and a superior, fresher Anise aroma. Anise Myrtle essential oil is extracted via steam distillation of the stems and branches.

    Boronia megastigma grows to less than a meter. It has small leaves and small cup-shaped flowers, which occur in spring.     Conventional or organic available Yarrow has been known by several common names including Devil’s nettle, Old Man’s Pepper, Yarroway, Woundwort, Milfoil, Angel flower. The Achillea genus contains over 120 species and several subspecies. Achillea millefolium is widespread throughout Europe while A. lanulosa is common to North America although A. millefolium has been introduced as well. These two species are practically identical Achillea millefolium is native to Europe, Asia and has naturalized throughout North America as well as to other temperate zones of the world. It is a perennial herb with several erect stems arising from multiple rhizomes below the ground. The compound leaves are bright green and feathery. Numerous small, white to pink flower heads are borne in flat-topped clusters (Van Wyk and Wink, 2004). Yarrow is a venerable plant of ancient medicinal repute (Hatfield, 1971). According to legend, the Greek hero Achilles is said to have utilized Yarrow to stop the bleeding (styptic) of his soldiers as well as his own wounds during the Trojan War. It is thought that the genus name, Achillea, comes from this great warrior of Greek mythology. Roman centurions knew this plant under the name Herba militaris and later by ‘Soldier’s Woundwort’ and Carpenter’s Weed, reflecting its use for treating wounds. The species name millefolium is derived from the common name Milfoil which comes from the French mile feuille, meaning ‘1000 leaves’, referring to its feathery leaves, which are divided into thousands of tiny leaflets (Balick, 2014). Yarrow was formally named Achillea millefolium by Linnaeus in 1753 (Keller, 2014).

    Conventional or organic available Neroli oil is an essential oil produced from the blossom of the bitter orange tree (Citrus aurantium subsp. amara or Bigaradia). Most of the parts of the bitter orange are valued for their strong but alluring fragrance, and are vital in the fragrance industry. Orange oil comes from the orange peel the leaves are used to make petitgrain oil and the flowers are steam distilled to make neroli (or orange blossom) oil. Neroli oil is widely used in the perfume and fragrance industry. Eau -de -Cologne, the famous perfume from Cologne, Germany, used this oil as its main ingredient. It was named after the 16th century Princess Marie-Anne de La Treemoille of Nerola, Italy, who loved the fragrant orange blossom scent and introduced it to Italy. Neroli oil has a deep, intoxicating mix of citrus and floral aromas and can be pale yellow or coffee-brown in color. Neroli oil is costly to produce. It takes one ton of bitter orange blossoms to make one quart of oil.

    The santalum spictatum is a tree native to semi-arid areas at the edge of Southwest Australia and it is one of four species of the family Santalaceae to occur in Western Australia. Normally a shrubby to small tree, it can grow up to 6 meters and is tolerant of drought and salt. The foliage is gray-green in color. The fruit is spherical, about 3 cm in diameter and is orange. The oil from this amazing tree is proving very popular and more commercially viable than the Indian Sandalwood. To ensure sustainable existence for the natural sandalwood resources, timber harvesting has been regulated since 1920 by the Western Australian Sandalwood Control Act (1929). Plantations were established to renew the tree populations and essential oil production comes only from these managed sources. The trunk and roots of Australian sandalwood are stripped of bark and distilled for their essential oil. Its sweet, woody character with spicy accents is similar to the fragrance of Indian sandalwood (Santalum album), but the rawer, earthy dimension makes it an original and distinct material. The oils produced by the tree contain a greater complexity of chemicals, many of which have antimicrobial qualities. Sandalwood oil is widely known for being a spiritual, sacred oil, used around the world during practices of prayer and meditation. It is well known in Australian Indigenous circles, and traditional Aboriginal uses include making of implements/artifacts and for medicinal purposes and the seeds/fruits were eaten.

    Tasmannia lanceolata (syn. Drimys lanceolata), commonly known as the mountain pepper is a shrub native to woodlands and cool temperate rainforest of south-eastern Australia and the mountains of Tasmania. The shrub varies from 2 to 10 m high. This attractive tree has shiny dark green pointed leaves with scarlet stemletts. It has small, waxy, cream flowers which develop into dark charcoal brown pepper berries, only born by the female plants. The small cream or white flowers appear in summer and are followed by black, globose, two-lobed berries 5–8 mm wide, which appear in autumn. There are separate male and female plants. The oil is steam distilled from the fruit of the tree and has an intense peppery background aroma, with spicy, exotic top notes, a hint of cinnamon and the Australian bush.

    Conventional or organic available Eucalyptus smithii, or gully gum, is a native tree of northern Victoria and southern New South Wales, Australia. It naturally occurs on the lower slopes, gullies, and swamps, where soil does not dry out. The species is widely grown in southern Africa, and its leaves are used for the production of distilled eucalyptus oil. The essential oil is steam-distilled from the twigs and leaves and has a woody, camphorous, yet fresh aroma. Eucalyptus Smithii is the mildest Eucalyptus oil and is the preferred choice for use with children or the elderly or when prolonged use is required. Australian aboriginals use oil-containing eucalyptus leaf infusions as a traditional medication for body pains, fever, sinus congestions, and colds. As early as the 1880s, surgeons were already using eucalyptus oil as an antiseptic during operations. Toward the end of the century, the oil was used in most hospitals in England to clean urinary catheters.     Ginger essential oil is extracted from the plant Zingiberaceae officinale of the Zingiberaceae family and is also known as Common or Jamaica Ginger. The plant is said to originate from India, China and Java, yet is also native to Africa and the West Indies. It was most likely brought to Europe between the 10th and 15th century as a condiment and spice. Ginger is a perennial herb and grows to about 3 - 4 feet high with a thick spreading tuberous root. It has narrow spear-shaped leaves and white or yellow flowers growing directly from the root. The oil is distilled from the unpeeled dried ground root. The aroma of Ginger Essential Oil can vary widely, depending on the distillation and quality of the root being distilled It has been used as a medicine since very early times and is recorded in both Sanskrit and Chinese texts and is also mentioned in the literature of the ancient Greeks, Romans, and Arabians. The name ginger is said to be derived from the Gingi district in India, where tea made from ginger is used for stomach upsets.

    A warming, stimulating oil, Pink Peppercorn is steam distilled from the fruit of the Schinus mole. This popular spice was considered sacred to the ancient Incas and has been used in traditional medicine for hundreds of years. Pink Peppercorn (Schinus molle), also known as the Peruvian peppertree, peppercorn tree and Californian pepper tree is a member of the Anacardiaceae family. It’s an evergreen tree that grows up to 9 meters in height by 7 meters in width. It is native to the Peruvian Andes. Chains of cream flowers appear at the end of the branches in summer followed by peppercorns, which turn pink in autumn and are referred to as ‘pink peppercorns’ although they are not true peppercorns. Pink peppercorns have a citrus flavor and are much more fragrant. Shinus molle grows wild throughout most of Australia in a range of habitats from grasslands to dry open forest and coastal areas. The branches tend to droop which gives the tree a weeping effect. It is found as a bush in dry lands but reaches tree size in dry river beds with accessible underground water. It is an evergreen that has a graceful fern like foliage. This tree grows well in the sun and is drought tolerant so can still flourish with only occasional watering. All parts of the tree have high oil and essential oil contents that produce a spicy, aromatic scent.

Its high citral content gives it a nice lemon scent. It also contains Citronellal, Citronellol and Geraniol making it an effective insect repellant.
