Viking Golden Ale Malt is made from 2-row spring barley. Malting process parameters have been chosen to promote high degree of modification for easy processing. Viking Golden Ale Malt has reduced enzymatic potential. Strong flavor contributes malty, cookie, sweet and nutty notes with great balance of those. Golden Ale Malt is ideal for ales and special lagers. The coloring power of Golden Ale Malt is not too high, which makes it also suitable for subtle color correction of regular lagers giving noticeably hue towards gold.

PLATINUMSWAEN® SALTY CARAMEL MALT gives a slight caramel-sweet-salty taste and a golden glue touch to your beer. Remarkable mouthfeel, head retention, and extended beer stability.

Medium Peated Malt is produced using conventional two-row spring pot still malt. Through the unique way we introduce peat reek, the smoke character is cured into the grain which is what sets our peated malts apart from others. The aromatic smoke that is produced during the peating process combined with our traditional skills handed down through generations, ensures the phenolic qualities are best preserved.

GREENSWAEN® GOLD CLASSIC is a type of caramel malt. Intensifies the beer’s body and its smoothness, promotes head formation and retention and creates soft toffee notes in the beer aroma. By the special production procedure GreenSwaen©Gold Classic has a reddish shine and a typical aroma which serves to intensify and stabilize the flavor. It is used in dark festival beers, nutrient beers and brings a darker golden hue to your beer.

Weyermann Bioland CARAHELL is made from the finest quality brewed barley from organic farming. The malt is golden-brown with a malty sweetness and light caramel notes. Our special manufacturing process creates a almost complete caramelization of the grain is achieved.

Bairds Malt Limited Lager malt is made from a spring variety to produce a base malt with lower color than our Pale Ale malt but still full of character and flavor. BEST Caramel® Hell – known as BEST Caramel® Light – reinforces the typical “caramely” malt aroma of the beer, giving it a mouth feel that is reminiscent of vanilla and cream toffee. The color of the beer ranges from golden hues to amber, depending on the amount used in the grain bill. The foam and flavor stability of the beer are also improved. As with BEST Caramel® Pils, only the best two-row summer barley varieties are used together with our gentle BEST caramelization technique to make this outstanding specialty malt. BEST Black Malt (roasted malt) is roasted more intensively than BEST Chocolate and is ideal for very dark beers and Stouts that are characterized by a pleasant roasted note. Depending on the amount used in the grain bill, the malt produces a flavor profile in the beer ranging from bitter chocolate to strong coffee. Despite the more intensive roasting process, our gentle methods prevent astringent, unpleasantly bitter tastes, as can be easily validated when checking the comparatively low pyrazine levels. At the same time, the beer retains a light-colored foam. BEST Black Malt complies with the purity guidelines of the German Reinheitsgebot.

Viking Vienna Malt cured at slightly higher temperatures than pilsner malt. Consequently Vienna Malt gives a golden colored beer and increases body and fullness. Due to the higher curing temperature, the enzyme activity of Vienna Malt is slightly lower than that of pilsner malt. Flavor of Vienna Malt is subtle, including maltiness, some sweetness and hints of caramel aromas. Slightly nutty sensations can also be found.

BEST Chit Malt is used occasionally or consistently in the mashing process, making it unique among special malts. This barely dissolved barley malt is characterized by a very high level of high-molecular protein compared to a Pilsen malt, making it more suitable for compensating strongly dissolved malts and improving the foam. The malt has a particularly high level of inherent starter enzymes, which contribute significantly to improving the conversion of starch, thus increasing the yield. Thanks to its pale color, BEST Chit Malt does not add color to the beer. BEST Chit Malt complies with the purity guidelines of the German Reinheitsgebot.

Weyermann Bio Buchenrauch-Gerstenmalz is a made from the finest quality organic malting barley. Finest beech wood smoke gives this malt its unmistakable aroma.

BEST Acidulated Malt is used to optimize the pH in the mash when the water used for brewing is suboptimal. This leads to an increase in enzyme activity in the mash and thus a higher yield and improved flavor stability. The malt also produces a lighter color in the wort and balances the flavor of the beer. The amount used and its effect on the mash pH must be determined by means of preliminary tests. The pH of the wort and the beer is generally not reduced as the improved starch conversion results in more buffer substances being formed. BEST Acidulated Malt complies with the purity guidelines of the German Reinheitsgebot. BEST Acidulated Malt is also available in organic quality.

BEST Black Malt eXtra (roasted malt) is the darkest malt in the BEST Black Malt series. The intensive roasting process produces colors and flavor components that give the beer a black to deep black color and nuances of black coffee or strong espresso. BEST Black Malt eXtra does not make the foam darker either and complies with the specifications of the German Reinheitsgebot.
