Anthocyanin pigments are glycosides of anthocyanidins and belong to the group of flavonoids. In addition to being food dyes, they have antioxidant and therapeutic properties, which makes them a functional dye, giving added value to foods that contain them. They are stable to light, heat and acid pH's below 4; In terms of color, anthocyanins, being acid-base titrants, acquire orange to reddish tones at acidic pH, purple at neutral pH, and purple to bluish at alkaline pH.
