Grande Custom Ingredients Group proposed that the customer use a formula of 10% Grande Bravo 500 and water to replace 50% of the sour cream, 50% of the mayonnaise and 50% of the cream cheese used in the formulation for the dip. These reductions decreased the product’s dairy ingredients cost but did not affect the rich, creamy mouthfeel or the product’s flavor.

Process

Like many customers, this manufacturer was not able to provide Grande with the entire formulation for this product; instead, we were provided limited information our Applications R&D team was able to use and “build on” in its pursuit of a solution. Our team developed a number of potential formulations for the customer to evaluate, each with a slightly different taste depending on the specific Grande Bravo used. Due to variations in amounts of lactose, each Grande Bravo has a unique taste: slightly tart, mild/sweet or mild/milky. Each provides a specific viscosity and mouthfeel, too: smooth/gel-like, heavy/creamy, slick/ slippery or heavy/tacky.
