- Chickpea flour is used in making pitas, channa, hummus and other Indian cuisine. Use as a meat binder in hamburger and loafs. Works extremely well as a thickener for soups, stews and sauces. Holds moisture in brownies, chewy cookies and cakes. Chickpea flour is high in protein and a good source of iron, magnesium, copper and zinc.
