- Product Highlights
Principle: The enzyme is an endoamylase which can randomly hydrolyze the interior alpha-1, 4-glucosidic linkage of starch, yielding soluble dextrins and oligosaccharides. Consequently the viscosity of gelatinous starch solutions is rapidly reduced, Prolonged hydrolysis with the enzyme results in the formation of small quantity of glucose and maltose.
Activators: Calcium ions make great contribution to the stability of the enzyme. For liquefaction of starch slurries the addition of 100 to 150ppm calcium is recommended.
Definition of activity: One unit of enzyme activity is that amount of enzyme which will dextrinize 1.0g of soluble starch in one minute under the following conditions: Temp 60℃; PH 6.0
Applications & Uses
- Markets
- Food & Nutrition Applications
- Applications Reference
Alcohol industry: In distilling process raw material should be milled and pass through 1.5 mm sieve Mix well with water in the ratio of 1 to 3.5 to 4, PH 6.0 -7.0. In high temperature distilling process, 0.5L of BAA is added into one ton of materials. Heat in the container at 90℃. In low temperature distilling process, 1L enzyme is added into one ton of materials. Heat in the container at 80-85℃. In steam jet process, the temperature at outlet may reach 88-90℃ and maintain at 85-88℃,2L enzyme is added into one ton of materials.
MSG, Maltose and Glucose industry: Mix raw materials with water adjust PH value and then 2.5L of enzyme is added into one ton of materials. In batch liquefaction raise the temperature up to 80-85℃ rapidly, maintain for 30 minutes. In steam jet process, the temperature at outlet may reach 88-90℃ and maintain at 85℃ for 30 minutes.
