  • Like everything good, natural yeast also needs time to develop optimally. Please note that the dough takes approx. 14 hours to rise. The best way to prepare the dough in the evening or in the morning for the evening.
  • Already knew: The natural yeast, called Lievito Madre, is a natural, very mild wheat sourdough. In fine flour mixed with crystal clear water, different strains of wild yeast and lactic acid bacteria develop in a very special, natural balance. In the Meraner Mühle we freshen up our natural yeast every day and dry it very gently. For this we have created an optimally protected environment in terms of safety, hygiene and temperature, where the most modern analysis systems are used. This is the only way we can guarantee the highest, constant quality.
