Procedure
  • Preblend MASBLEN™ 6101 with sugar, and mix into water under high shear (Speed 3).
  • Add remaining dry ingredients (salt, mustard powder, potassium sorbate) and mix under high shear.
  • Add in butterfly whisk attachment, then very slowly drip the oil into the mix (Speed 4).
  • Add vingear and mix till combined.
  • Decant and pack into bottles.
