Sunflower Oil (or other types of oil) 58.0 Vinegar (5% Acidity) 7.0 Sugar 6.0 Salt 1.20 Mustard Power 0.50 Potassium Sorbate 0.05 MASBLEN™ 6801 0.25 - 0.40 Water Up to 100% - Procedure
- Preblend MASBLEN™ 6101 with sugar, and mix into water under high shear (Speed 3).
- Add remaining dry ingredients (salt, mustard powder, potassium sorbate) and mix under high shear.
- Add in butterfly whisk attachment, then very slowly drip the oil into the mix (Speed 4).
- Add vingear and mix till combined.
- Decant and pack into bottles.
