ONION is obtained from healthy, clean and dried bulbs of Allium cepa (onion) and other edible varieties. It is the most widely cultivated species of the genus Allium. The onions are washed and trimmed, then peeled and finally dried. They are majorly sourced from India and China.

SWEET OLEORESIN is a natural color derived from paprika (Capsicum Annuum). Slightly viscous, it has a good consistency and is recommended for use on non-sterile products. This product is for use in the food industry and not for personal consumption.

CINNAMON CEYLAN is the dried bark and deprived of most of its epidermal layer from Cinnamomun zeylanicum and other species. It is harvested by peeling the bark off the tree and allowing it to curl up as it dries. The eclairs are classified, cut and sold by size. Cinnamon is harvested in Sri Lanka during March and April, although there are varieties that produce it throughout the year.

Cassia (Cinnamomum aromaticum, Cinnamomum Cassia), also known as Chinese cinnamon, is and comes from an evergreen tree native to southern China, Bangladesh, India and Vietnam. It is said to be a relative of cinnamon (Cinnamomum Zeylanicum), "the true cinnamon", and the dried bark is also used as a spice. Cuts are made in the bark of the branches, which once dried, roll up on their own, acquiring the silhouette of a tube or canutillo.
