LiqueStar

LiqueStar is a heat stable endo-alpha-amylase enzyme made from the refined strain through liquid submerged fermentation. LiqueStar has excellent heat resistance and adaptability over a wide pH range. Function Principle

It rapidly and randomly hydrolyze 1,4 α-D-glucose bonds of the starch chains with release of mainly dextrin and small amount of glucose and maltose, so as to reduce the viscosity of the mash and liquefy the starch.

Performance Conditions

Working pH range 4.5-7.0, optimum 5.0-6.0;Temperature 60-105°C, favorable 85-90°C.
