The dry guar beans are threshed to extract the guar seeds from the bean. In a further step, the hydrocolloid guar (split) is produced from the core by separating the shell and the germ. Rajasthan, Gujarat and Haryana are among the most important growing regions.
In a further process step, these guar splits are ground to guar gum and are used as E412 in the food industry. The ready-to-use guar gum can be dissolved in cold water and forms highly viscous solutions even in low concentrations.
