- Ancient grains are loosely defined as grains that have been largely unchanged over the last several hundred years. Unlike common wheat varieties, these grains have not been selectively bred and altered by modern agriculture. Reflecting the diversity of our global flora, our BP 50/50 Ancient Grain Bread Base includes both New and Old World ancient grains and seeds, including rye, sunflower, oats, millet, flax, barley, sesame, buckwheat, einkorn, and chia.

- For added premium flavor we’ve included a natural dehydrated rye sourdough. Sourced and fermented from the hills of Tuscan rye fields, this sourdough imparts mild acidity, with a malty flavor, and hints of nuttiness.
- Paired with whole wheat and dark rye flour, our Tuscan sourdough imparts an attractive artisan brown crumb color.
- Our dehydrated sourdough is ideal for bakeries that lack the floor space, time, or skilled labor necessary to maintain their own sourdough but do not want to sacrifice flavor. It is a convenient 50/50 base, clean label, and a non-GMO blend of ancient grains, seeds, and dried Tuscan sourdough that lends an earthy, nutty aroma.
