Made up of 76% of water, the roots are cut into slices and dehydrated using a drying process that lasts several hours, preserving the plant’s natural nutrients, including inulin. Once the moisture content has reached 10%, the slices, now referred to as cossettes, are sent to a chiller before being stored in a warehouse.
