Rosemary, whose Latin names means “sea dew”, was considered to be a sacred plant by the Ancient Greeks and Chinese. In the Middle Ages it was burnt to ward off demons and evil spirits. It was also thought that is would preserve youth, which explains its presence in the legendary “Hungary Water”, use of which was two-fold: it could be drank as well as used as a perfume, and the hope was that it would purify the body with its aromatic properties. Today rosemary is considered to be a symbol of love and loyalty and is used as a sacred plant in many marriage ceremonies. Although rosemary grows across much of the world, it plays a major role in the Mediterranean region, both culturally and in terms of use. It grows prolifically in the countries of northern Africa, where it is distilled for its cineol compound featuring eucalyptus notes.
