The unique cocoa powders of JS are highly defatted and near 100% fiber solids. Applied in bakery and confectionery, ice cream and dairy as well as in low caloric health products. Ensuring high intense coloring and dispersibility in liquid is exceptionally good. Due to less fat, a mild alkalization still results in a strong intrinsic color impact without requirements to label alkali (under 7%).
