    FOS are soluble fibers that generate several favorable effects on digestive health through increased peristalsis, also contribute to water retention by the bolus and have an osmotic effect associated with a laxative response, contributing positively to constipation problems.

    Compared to other roots and tubers, yacon has a high amount of phenolic compounds with recognized antioxidant activity. Among the phenols present in yacon, chlorigenic acid, tryptophan, quercetin, ferulic acid, gallic acid and at least four soluble phenols derived from caffeic acid have been identified. Yacon-based products are ideal food supplements with applications in foods low in calories and fat.
