Chitosan oligosaccharide is soluble in water and has low molecular weight, and this makes it suitable as an ingredient in food, health care products and medicine. Food grade chitosan oligosaccharide has other names such as chitosan oligomer, chitooligosaccharide, chitosanoligosaccharide, etc.

Chitin is basic raw material to manufacture chitosan and glucosamine. Food grade chitin: from deep-sea and high quality crab shell, such as Alaska snow crab legs.
