Capitol Food Company Big 49er Sour is a sourdough bread produced by fermenting dough with yeast and naturally occurring lactobacilli. It has a more sour taste and better inherent keeping qualities than bread made with baker’s yeast, because of the lactic acid produced by the lactobacilli. This base mimics San Francisco sourdough and is defined by a very sour taste, which has less to do with yeast type than proofing time. The sourdough becomes sourer with longer proof–rising time before baking.
