Mexico has a lot of local cuisines. But central is the barbacoa. Originally this meant that meat, especially lamb and sometimes beef or goat, was wrapped in banana or agave leaves and then cooked over an open fire or underground. The result was silky smooth meat that almost melts on your tongue.
