Mole is a rich sauce that is originally used in Mexican cuisine, but also serves as the basis for various types of sauces. In modern-day Mexico, several sauces go by the name mole, varying in color, ingredients, and flavor. In particular, the molé poblano is known outside of Mexico as mole. In general, a mole consists of chili peppers, acid, spices such as black pepper and cinnamon, and is sweetened using a good dose of cocoa. The cocoa is not overpowering, but provides a balance of taste and is a good counterpart to the spicy chipotle.
