Paz Ingredients Rennet Casein is a phosphorus-protein complex (micelles) resulting from the milk coagulation by the action of microbial rennet enzymes. The molecular structure and the presence of calcium give the Rennet Casein its texturizing properties. Available in 30 / 60 / 90 Mesh size.

Paz Ingredients Milk Protein Isolates (MPI) is the substance obtained by the partial removal of sufficient non-protein constituents (lactose and minerals) from skim milk, so that the finished dry product contains 90% or more protein by weight. Milk protein adds a high-quality boost of amino acids in these products that helps you gain or maintain lean muscle, increases feelings of fullness and enhances their texture. Protein levels can range between 85%-90%.

Paz Ingredients Potassium Caseinate is a low flavor milk protein manufactured from fresh skim milk and can be used in a variety of food and pharmaceutical products, especially where low sodium levels are required.

Paz Ingredients Butter / Project Verified Non-GMO is provided by using unaltered cows that have not been genetically modified in any way, including their source of feed. This butter is certified by Food Chain ID and will contain the “Butterfly Stamp”.

Paz Ingredients Anhydrous Milk Fat / AMF contains at least 99.8 % milk fat and is made from fresh cream or butter. No additives are allowed. AMF contains a mixture of triacylglycerols (simplest lipids form of fatty acids) with multiple physical properties.

Paz Ingredients Acid Casein-30 / 60 / 90 Mesh is a milk protein with many functional properties. Fresh whole milk is skimmed and pasteurized. Then the product runs through an acidification stage. The result is Acid Casein. Acid Casein is an emulsifier that is flavorless and high in amino acids. Both Casein and Caseinates are highly ranked in their (PER) Protein Efficiency Ratio.

Paz Ingredients Caseinates are created by neutralization of acid casein with water. Caseins are water-soluble and the protein ranges between 88% and 95%. Paz caseinate types available are Spray-Dried, Extruded, Roller-Dried and Instantized. In addition to nutritional value it provides numerous functional properties suitable for making nutritional foods and processed cheese.
