The main use of safflower is for the extraction of oils in the oil industry, taking advantage of its high content of linoleic and oleic oil, being the second one, the most distributed in Mexico because of its mono-unsaturated acids (high in oleic acid), this makes it one of the best oils for human consumption because it can lower levels of harmful cholesterol in the blood without affecting high-density lipoprotein (HDL)
