Enzyme use levels are generally dictated by processing conditions, milk composition, and CaCl2 concentration. In general, 9-13 gram of Ailazyme® CHY-G be 2100 IMCU is used per 1000 liters of milk, but laboratory or pilot scale tests should run to optimize dose levels.
