    Glycyrrhiza glabra, also known as licorice and sweetwood, is native to the Mediterranean and certain areas of Asia.  The primary antioxidant and anti-inflammatory compounds found in Licorice Root are the glycosides - glycyrrhizin and glycyrrizinic acid, flavonoids, and saponins. Glycyrrhizin, a triterpenoid compound, accounts for the sweet taste of licorice root. This compound represents a mixture of potassium-calcium-magnesium salts of glycyrrhizic acid that varies within a 2-25 percent range.

    Derived from Licorice root, mono-ammonium glycyrrhizinate is a unique product that has an extremely sweet taste. MAG can be used in many products, not only to sweeten, but also to enhance the natural product flavor. MAG is up to 50 times sweeter than sucrose — and can greatly enhance an already sweetened product as a result of synergies with both natural and synthetic sweeteners. Other attributes include the ability to mask bitter and astringent aftertastes; and soften harsh notes. It can also be used for flavor modification at very low levels. Ammonium Glycyrrhizinate is an excellent foaming agent that acts as a co-emulsifier. It is also excellent in recipes that require gelling or suspension properties for a consistent feeling in the mouth or a stable cloud effect in the product.

    Applications & Uses

    Application

    Glycyrrhizinate Ammonium is included in dairy products, confections, baked goods, and beverages where sweetness or flavor enhancement is desired. It is an excellent addition to sauces such as gravy, BBQ, soy, beverages, chocolate puddings, ice cream, candies, cough syrups or cough drops and even cosmetics. It is also used to flavor tobacco for expensive cigarettes.
