- C.vulgaris accumulates high-quality proteins, with well-balanced amino acid profiles. C.vulgaris is also reportedas important source of polysaccharides or oligosaccharides, being proposed as potential prebiotic candidates(Martin et al., 2020).
- C.vulgaris synthesizes polyunsaturated fatty acids from the omega-6 family (n-6) (linoleic acid) and the omega-3 family (n-3) (alpha-linolenic acid) (Lidiane et al., 2018)
- C.vulgaris is a rich source of vitamins, notably vitamin B1, B2, B3, B6 (Watanabe et al., 2002).

- C.vulgaris liberates exopolysaccharides that can stimulate lactic acid bacteria growth in dairy products (Martin et al., 2016 ; Remize et al., 2021)

- C.vulgaris had a positive impact on the rheological features of doughs, acts on the viscoelastic characteristics, and participates in strengthening the gluten network (Graça et al., 2018).
- The supplementation (0.5–2%) with C.vulgaris results in an improvement of cooking and textural properties. C.vulgaris can increase firmness of pasta (Fradique et al., 2010).

- C.vulgaris is an essential source of vitamin B12 which gives many beneficial health effects (Koyande et al., 2019 ; Ryan-Harshman & Aldoori, 2008)
- C.vulgaris supplementation reduces cardiovascular risk factors by improving total cholesterol levels, low density lipoprotein-cholesterol levels, systolic and diastolic blood pressure (Fallah et al., 2018)
- C.vulgaris is rich in essential amino-acids able to regular cardio-vascular functions.
- C.vulgaris has a powerful capacity to detoxify the body of heavy metals such as mercury, ash and heterocyclic amines via induction of antioxidant enzymes and acts as an ion exchange resin (Qian et al.,2016; Lee et al.,2015, Rani et al.,2018).
