Bacterial Amylase is awater‐dispersible blend of the extracts ofBacillus subtilis,which includes high concentrations ofalpha‐amylase, ß‐glucanase (gummase), andhemicellulase along with moderate levels of protease. Bacillus amylases are known for their temperaturestabilities and rapid viscosity reduction of starchsuspensions. Thealpha‐amylase included in the IC product series isan endo‐acting amylase, which means that the branched components of starch including amylopectins arerapidly degraded, the enzyme thus by‐passes thebranch points in the starch components. This rapid degrading effect can be contrasted to the exo‐acting ßamylasefrom vegetable sources such as barley, whichstops catalyzing when it reaches a similar branch in thecarbohydrate molecule. Temperature stability can begreatly enhanced by the presence of soluble calciumions and by the presence of available substrate.
