Optimal temperature: 60°C (Caution: Oligosaccharide should be produced at 40°C due to enzyme stability)

Temperature stability: Maintaining the activity more than 90% after incubating at 40°C for 24 hours

Optimal pH: pH 4.0~6.0 (pH stability: pH 3.0~10.0)

Effect of metal ion: No inhibition by metal ions except Ag²+, Hg²+

Effect of deacetylation: High enzyme activity to 40~99% deacetylated chitosan

Main products: Chitosan oligosaccharide (3-7 sugars)
