• Both our pure maple sugar and organic maple sugar are made the same way. We evaporate the water out of our maple syrup and grind the remaining crystals into granules and powder. We never use chemicals or flow agents in our process. Both our pure maple sugar and organic maple sugar are roughly 95% sucrose

• The difference lies in the type of maple syrup chosen to make the maple sugar. Organic maple sugar is made from only 100% certified organic maple syrup, while pure maple sugar is made from pure maple syrup.
