Also called Cumaru, the seeds of the Dipteryx odorata tree have been used for centuries in perfumery as well as in food preparations due to its vanilla like flavor and scent. It was first discovered in 1868, and marked with a Latin name – Dipteric Coumarou. The substance responsible for the pleasant smell of the bean, coumarin, also has a dark side. Coumarin is very bitter to taste, signaling that larger doses of Tonka beans may provoke serious liver damage, and even be fatal. The beans are forbidden to eat in the USA and natural coumarin has been completely replaced by a synthetic one
