Caryocar brasiliense is a characteristic tree of the cerrado woodlands which is generally used in food preparations by local communities. Pequi butter mainly contains unsaturated fatty acids with oleic acid (omega-9) as well as saturated fatty acids with palmitic acid. It has a high carotenoid level (β-carotene ) offering antioxidant properties.
