- 1 box of Bloomfield Farms® Cornbread & Muffin Mix
- 1 ½ cups water
- 3 large eggs (or egg substitute)
- Mix it up!
- Try adding 1 cup drained whole kernel corn or ½ cup chopped jalapeños for a fun twist on the original recipe!
Corn Muffin Directions
- Preheat oven to 400°F.
- Lightly grease muffin tin with non-stick cooking spray.
- In a mixing bowl, whisk water and eggs until smooth.
- Place Bloomfield Farms® Cornbread & Muffin Mix in a separate bowl and slowly add egg mixture from Step 3.
- Gently hand mix with a spoon or spatula. Do not over-mix.
- Spoon batter into muffin tin, making sure each tin is %4 full. Tap pan on counter to level muffin batter.
- Place tin on middle rack in oven and bake for 15-20 minutes. 9"x 9"x 2" Square Pan: Lightly grease pan with non-stick cooking spray. Prepare ingredients as directed above. Bake for 25-30 minutes on middle rack in oven.

Fried Cornbread Directions
- Lightly oil skillet or griddle with corn oil and preheat to 375°F (medium temperature).
- In a mixing bowl, whisk water and egg until smooth.
- Place Bloomfield Farms® Cornbread & Muffin Mix in a separate bowl and slowly add egg mixture from Step 2.
- Gently hand mix with a spoon or spatula. Do not over-mix.
- Using a large tablespoon or ladle, place batter in heated skillet and fry approximately 2 minutes per side or until done.
