    Directions
    • 1 box of Bloomfield Farms® Cornbread & Muffin Mix
    • 1 ½ cups water
    • 3 large eggs (or egg substitute)
    • Mix it up!
    • Try adding 1 cup drained whole kernel corn or ½ cup chopped jalapeños for a fun twist on the original recipe!

    Corn Muffin Directions

    1. Preheat oven to 400°F.
    2. Lightly grease muffin tin with non-stick cooking spray.
    3. In a mixing bowl, whisk water and eggs until smooth.
    4. Place Bloomfield Farms® Cornbread & Muffin Mix in a separate bowl and slowly add egg mixture from Step 3.
    5. Gently hand mix with a spoon or spatula. Do not over-mix.
    6. Spoon batter into muffin tin, making sure each tin is %4 full. Tap pan on counter to level muffin batter.
    7. Place tin on middle rack in oven and bake for 15-20 minutes. 9"x 9"x 2" Square Pan: Lightly grease pan with non-stick cooking spray. Prepare ingredients as directed above. Bake for 25-30 minutes on middle rack in oven.

    • 3/4 cup water 1 large egg (or egg substitute)

    Fried Cornbread Directions

    1. Lightly oil skillet or griddle with corn oil and preheat to 375°F (medium temperature).
    2. In a mixing bowl, whisk water and egg until smooth.
    3. Place Bloomfield Farms® Cornbread & Muffin Mix in a separate bowl and slowly add egg mixture from Step 2.
    4. Gently hand mix with a spoon or spatula. Do not over-mix.
    5. Using a large tablespoon or ladle, place batter in heated skillet and fry approximately 2 minutes per side or until done.
