P-Coumaric is a potent antioxidant that can inhibit lipid peroxidation and radical scavenging, comparable to BHA, BHT, Î±-tocopherol, and ascorbic acid. It is also an effective anti-microbial against E. coli and S. aureus, and shown in food systems.
