Just like a fine wine, Swiss cheese gets stronger with age. Aged Swiss is kept in a cool environment for an extended period of time, allowing the flavor to develop further. This allows the cheese to have a deeper yellow color and a sharper flavor than the original Swiss. The signature “eyes” remain the same in Brewster Dairy AGED Swiss CHEESE as in the original or reduced-fat Swiss varieties.

There isn’t a more distinctive type of cheese than Swiss. It’s known as Emmental in some parts of the world, named after the area it originated in Switzerland. But everyone knows Swiss by the holes! Those holes are known as “eyes” in the business – and the larger the eyes are, the more pronounced the flavor of the cheese. With a pale but shiny yellow color, Swiss cheese has a mild flavor that is slightly sweet and nutty. Brewster Dairy REGULAR Swiss CHEESE is known for having less salt than many other cheeses and pairs well with fruits, such as apples, pears and grapes..

Our Brewster Dairy REDUCED FAT Swiss CHEESE is made using reduced-fat milk, meaning you still get all the goodness you know and love from your favorite Swiss cheese. It’s just a little lighter on the calories and fat. The reduced-fat milk makes the color of the cheese slightly paler and not quite as shiny. Everything else remains the same, from the holes to the mellow flavor.

Don’t get Brewster Dairy LACEY BABY Swiss confused with Baby Swiss. While similar in that they both contain much smaller “eyes” – or holes – they taste significantly different. Lacey Baby Swiss is also much softer and thinner than Baby Swiss. The taste is stronger than Baby Swiss, though still sweet and nutty. Sliced Lacey Baby Swiss looks like delicate sheets of lace and is lower in calories and salt than other types of Swiss cheese. It pairs best with dried fruits, nuts and sandwiches.

WithBrewster Dairy BABY Swiss CHEESE, it’s all about the “eyes.” The eyes – or holes, as you might call them – are much smaller than traditional Swiss, and much closer together. Baby Swiss is made in smaller batches using whole milk. It isn’t aged for very long, so the holes don’t have time to get very large. The small eyes combined with its pale yellow or ivory color helps to distinguish the Baby Swiss. And the taste is smooth, creamy and milder than Swiss. It’s still slightly nutty, but also buttery and pairs well with sweeter berries and wines.
