Cholaca is pure liquefied cacao that can be incorporated into food and beverages to achieve an optimal chocolate flavor.
- Store at room temperature.
- Place liquid cacao in a hot bath to make sure it is fully liquefied.
- Add post fermentation, prior to crashing, at around 55°F-65°F.
- Circulate well.
