Lipids, in general, are not hygroscopic molecules able to bind water such as proteins or sugars do. Because of their polar OH head groups the ceramides are capable of forming hydrogen bonds with water molecules, thereby creating a favorable environment for the movement of water into the skin. Thus, these intercellular lipids play a critical role in the water holding capacity of the stratum corneum, functioning as an "Environmental Protector" against Trans Epidermal Water Loss and subsequent dryness of the skin.

The furthest layer of the skin, the stratum corneum, is composed of flattened corneocytes between which are found lamellar bilayers made of ceramides, cholesterol, and free fatty acids that protect the skin and the organism from rapid dehydration and from external aggression.
