- Sautéing- Less oil is required because of higher smoke point and lower oil to food absorption rate We have seen up to 30% less oil absorbed into food.
- Dressings - Sunflower oil is a natural emulsifier. CM oil will not gel under refrigeration. Neutral flavor allows endless opportunities for herbs, spices, vinegars and fruit to shine without these flavors being masked by oil flavor. Leaving your pallet with a clean non-oil feeling unlike EVOO.
- Dipping & Infused Oils - Neutral flavor allows endless opportunities and exposes the natural flavors of herbs and spices.
- Baking - When comparable oil volumes are used, tests have shown less oil is needed then traditional vegetable oil and shortening. Testing has shown up to a 30% reduction needed to achieve same results. Used as a substitute for butter CM sunflower oil can replace butter at a 1:1 ratio or less. CM recommends testing your recipes to find the ideal amount for your application.
- Deep Frying - Less oil absorption into food. Durable against moisture and heat, CM oil can extend fryer oil life. Smoke point of >450°. Less “topping off” of the fryer. Food should be fried by time not by color. Food may burn if fried to color as sunflower oil produces lighter colored food. Oil should be changed when quality of food is affected not when the color of the oil changes. If oil is filtered daily high oleic sunflower oil can last longer than traditional fryer oil before needing changed. We have seen up to 30% less oil absorbed into food.
