D.P.V. is effective for decomposing the cellular wall of fruit, thus providing excellent yields in fruit processing. In the different applications, treatment with D.P.V. gives the following advantages:
- Fast and easy juice extraction with the formation of interior pressure.
- Increase in the juice that flows freely and in the total yield.
- Higher extraction capacity due to the faster filtration index.
- Fast reduction of viscosity.
For these applications, the dose of D.P.V. will be in the range of 100 ml/ton with 20ºC-50ºC and a resting time of more than 1 h. before pressing. A higher dose may be necessary with lower processing temperatures or shorter resting times.
