- When 10-20 %( v/v) cane juice is treated with Dextranase L, the optimal reaction conditions are temperatures between 55- 60°C at pH values between 5 -7. With a reaction time of 10-20 min under these conditions, 5-10 ml of Dextranase L per 1 ton of raw juice is recommended. When 60-70 %( v/v) syrup is treated with Dextranase L, the optimal reaction temperature are between 70-80°C at pH 5-7. With reaction time of 30-60 min under these conditions, a dosage of 50-100 ml of Dextranase L per 1 ton of syrup is usual.
- It is recommended in each case to optimize the enzyme dosage according to the actual processing conditions.
