ProcessSoybeans are soaked and cooked in cylindrical steam cookers. The cooked beans are_x005F formed into nuggets and dusted with “seed koji”_x005F (aspergillus oryzae). The nuggets are placed in a_x005F temperature and humidity-controlled incubation_x005F chamber. During the 48 hours in the incubation_x005F chamber, the nuggets develop fuzzy yellow mold. The_x005F matured koji is put into fermentation tanks with water_x005F and sea salt. Under constant supervision, the blend ages_x005F for 4-6 months. The product is wrapped in layers of_x005F cloth and pressed to yield the raw shoyu. The raw_x005F shoyu is pasteurized and filtered to become the finished_x005F product.
