Hydration:
- Hydration ratios can vary from 2:1 to 4:1 (water to Citri-Fi®) based on the application.
- Citri-Fi® TX is hydrated similar to texturized vegetable protein (TVP) - about 15 minutes hydration time.
Recommended Usage Methods:
- Coloring: Citri-Fi ®TX can be colored to simulate meat appearance using coloring agents (e.g. beet juice). Color is added to water during the hydration step which is absorbed into the Citri-Fi® TX during hydration.
- Usage Levels >4%: Some flavor maskers are needed to improve the taste especially since no flavor or seasonings were used.
