Quality Characteristics

Defects

The product shall be practically free from defects with no more than 5% loose skins or broken or mashed units, and no more than 3% blemished beans, and no more than one piece °F extraneous vegetable matter per 80 ounces °F net weight.

Character

The beans shall have a good, typical texture that may be slightly s°Ft or slightly firm; the skins shall be tender.

Color

The product shall have a good color that is reasonably uniform, typical °F Blackeye Peas.

Flavor

The product shall have a good, normal flavor and aroma and be free from objectionable flavors and odors °F any kind.

Microbiology

All products are thermally treated and considered commercially sterile.
