Defects
The product shall be practically free from defects with no more than 0.5% spotted or discolored peas, by count, and no more than 3% °F the peas in pieces, by count, and no more than one aggregate unit extraneous vegetable matter per 100 ounces °F product.
Maturity
The peas shall be young and tender and not more than 12 percent shall sink in an 11 percent solution °F salt water and not more than 2 percent shall sink in a 13 percent solution °F salt water.
Color
The peas shall possess a good color typical °F young tender peas °F similar varietal characteristics and shall be practically free °F blond peas. The liquor may be slightly cloudy or slightly tinted green.
Flavor
The product shall have a good flavor characteristic for the maturity °F the peas and be free from objectionable flavors and odors °F any kind.
