The product shall be practically free from defects. Defects include seeds, core material, blemished pepper, or anything that detracts from the appearance of the finished product.

Character

The product shall have good character typical of red pepper strips. The strips shall be 3/8” wide and of reasonable length.

Color

The product shall have a good red color typical of processed red pepper strips.

Flavor

The product shall have a good flavor typical of acidified peppers and shall be free from objectionable flavors and odors of any kind.

Microbiology

All products are thermally treated and considered commercially sterile.
