Green marine farming Nori dried has been eaten in Japan since at least the eighth century. Nori was first collected as it grew on oyster shells, rocks, wood, and other aquatic detritus in shallow waters of mineral-rich estuary regions, where the rivers empty into the sea. In a compatible environment plants grow quickly, and can go from spore to harvest-ready in 45 days. Nori was eaten as a paste for hundreds of years, but in 1750 an inventive resident in Edo (modern Tokyo) applied the principles of paper-making to nori processing. This person, whose name has been lost to time, gave the world dried nori sheets, which we still enjoy today wrapped around sushi.

When the Nori is finely crumbeled, they dry and roast the sheets. Nori sheets are mainly used for making Maki or sushi. There are many different qualitie labels. The most important things to look at are dark color, glance and thickness of the sheet. Nori sheets are available in consumer packaging (5 sheets), food service packaging (50 sheets) and on rolls for the sushi industry.

Green marine farming Wakame dried has been consumed for thousands of years in Japan. Wakame salad is made of kuki-wakame. Kuki-wakame is another word for the stem (mid-rib) of the wakame. Wakame is a slippery, tender, yet firm substance, so seaweed salad has all of these qualities. You’ll also notice a substantial chewiness, perhaps even a little crunchiness. It is slighty sweet taste and a great texture and color. This locally (in EU) cultivated product is a very good alternative for the Asian wakame. This sea vegetable is cultivated in the prestine Norwegian waters. Like the Asian wakame it can be used in soups, salads, hybrid-fish- and plant based products. It is organic certified.

Green marine farming Sea lettuce dried has a slight salty and fresh flavor. The smell is really great, some people say it lookslike spinach. As it has no holdfast (so it cannot attach itself to lines), sea lettuce is difficult to cultivate at sea. Our sea lettuce is cultivated near the sea in bassins. This gives the farmer full control over food safety and quality. It is organic certified.

Sugar Kelp is regarded one of the most delicate of the edible seaweeds because of their sweet taste and their natural content of glutamate, providing the rich and tasteful umami flavor. Sugar kelp powder can be used as flavoring in all seafood dishes; soups, stews or in the flour we use for breaded fish filets.
